Interim Leadership:
ROI served as the interim Director of Operations throughout the three-year partnership, providing hands-on leadership and strategic oversight. During this time, we ensured operational stability and growth while identifying, hiring, and training a permanent Director of Operations to seamlessly transition into the role.

Growth Planning:
With operations optimized, ROI developed and implemented a detailed growth strategy to support long-term scalability.

Commissary Kitchen Setup:
To ensure food quality and consistency, ROI established a commissary kitchen to centralize food preparation and supply chain management.

Location Expansion:
Over the next three years, ROI supported Poppo’s in opening five additional locations, doubling their footprint and solidifying their presence in the market.

Technology Upgrade:
We facilitated a seamless transition from Clover POS to Toast POS, equipping Poppo’s with a modern, scalable system that better suited their growing operational needs.

Franchising Readiness:
ROI laid the foundation for Poppo’s to begin franchising by creating scalable systems, operational consistency, and a proven growth model.

Results:
Through our partnership, Poppo’s Taqueria achieved consistent operational excellence, expanded to nine locations, and positioned itself as a thriving, scalable brand ready to launch its franchising journey.
